The 28 Grams of Happiness project aims to respond to a simple question and to a not so simple one as well: why do we like the food that we like? Can we become happier and smarter by eating the right things? Food design studio The Eatelier and creative chef Pippens address respond with a beautiful setting on Section-C they which creates an educational, fascinating and sensory lunch and dinner experience.
Edible Invisible @ the (Micro) Embassy of Food

Microbes, fungi and bacteria are everywhere and influence our lives, from physical health, to our emotional well-being. Curated by the the Dutch Institute of Food & Design, the (Micro) Embassy of Food focuses on the invisible components in our food investigating what designers can do with all the knowledge about the role of micro-organisms in our digestive tract, in the soil and for agriculture. On show an installation in which people can grow algae by feeding them with bacteria from their breath and saliva. Julia Schwarz has developed a range of post-apocalyptic food products like butter and pesto made from lichen, a mossy fungus growing on plants, tree bark and rocks.

The finalists of the Future Food Awards are on display at the Embassy of Food. On show projects changing the world of food through critiquing the meat industry and revolutionizing the way we use spices. Here, Kuang-Yi Ku presents The Tiger Penis Project which makes use of emerging biotechnologies to create artificial animal parts for Chinese Medicine while preserving endangered species as well. The project combines Western and Eastern science, technology and traditional medicine reconnecting us to Nature in a sustainable way.

G18, Design Academy Eindhoven grad show – Campina Milk Factory, 5613 LE Eindhoven.
Design Academy Eindhoven‘s graduate Laila Snevele presents an installation which combines empathy with material, color, facial mimicry, and overall feeling, to prove that taste is created mostly, if not entirely, in our minds. The project on show at DAE grad-show G18 puts a (digitalized) face to 5 basic tastes: sweet, sour, bitter, salty, and umami. “Our mind creates taste expectations before food reaches the mouth. When you look at someone eating a lemon, you know the food is going to be sour – from here, the project looks at a facial expressions on a screen to unleash an awaken empathy which can change our own experience of food”.
ZuiderzeeFood

As part of the ZuiderzeeFood project, Foodcurators created a pop-up bar serving coffee brewed with modern techniques but based on old brewing customs. Taste the Polder Waffle, a new application of the potato – the cornerstone of Dutch cuisine. “The potato is inextricably bound up with the Zuiderzee area which yielded vast plains of fertile soil, much of which was used for potato production“. Foodcurators took the old-and-trusted Frieslander potato and processed it into a sweet delicacy.
